Pour Jolly Coconut Milk in a bowl. Add gelatin powder over coconut milk and stir well. Set aside.
Combine whipping cream and sugar in a sauce pan. Bring to boil then remove from heat. Add gelatin mixture and stir until completely dissolved, about 5 minutes.
Pour 1/2 cup of mixture into martini or wine glasses. Chill until set.
To make caramel syrup, combine sugar and 1/4 cup water in a sauce pan. Caramelize over medium heat until golden. Remove from heat then pour remaining 1/2 cup water. Return to heat and stir until caramel is dissolved. Let cool completely.
To serve, spoon cubed Jolly Peach Halves and caramel syrup over panna cotta and garnish with mint leaves.
