Boil water in a pot over high heat. Turn heat to medium, then place the pork meat, salt and pepper corn in boiling water. Cover the pot and simmer for about 45 minutes to 1 hour or until meat is tender. You may use pressure cooker to reduce cooking time to 20 minutes.
Remove cooked pork and then grill it over coal until crisp and slightly charred.
Let it cook and cut into small chunks.
In a large bowl, combine pork meat, onions, ginger, siling labuyo, calamansi juice, and Jolly Real Mayonnaise. Toss to combine. Season with salt and pepper to taste.
