Sweet and Sour Pork Stir-fry

  • 2 tbsp. vinegar
  • 2 tbsp. soy sauce
  • 1/4 tbsp. brown sugar
  • 1 tbsp. cornstarch
  • 1 cup tomato sauce
  • 1/4 cup water
  • 1/2 tsp coarse salt
  • 1/4 tsp ground black pepper
  • 2 tbsp. Jolly Heart Mate Canola Oil
  • 500 g pork tenderloin, halved lengthwise and thinly sliced
  • 6 pcs scallions, white and green parts separated, cut into 1 inch lengths
  • 2 pcs bell peppers, ribs and seeds removed, cut into 2 inch pieces
  • 1 can Jolly Green Peas 155g
  • 1 can Jolly Young Corn Cuts 425g, drained
  • salt and pepper to taste
  • 3 pcs red chili


  • 1/2 cup Jolly Pineapple Chunks
  • 1/2 cup pineapple juice


  1. In a small bowl, stir together vinegar, soy sauce, brown sugar, cornstarch, tomato sauce, water, salt, and pepper. Set aside.
  2. In a large nonstick skillet, heat Jolly Heart Mate Canola Oil over medium-high heat.
  3. Cook pork until well browned on one side, about 1 minute (pork will cook more later); transfer to a plate.
  4. In the same skillet, add scallion whites, bell peppers, Jolly Green Peas, and Jolly Young Corn Cuts; season with salt and pepper.
  5. NOTE: If desired, add Jolly Pineapple Chunks and pineapple juice here.
  6. Cook while stirring, until bell pepper pieces are crisp-tender, 6 to 8 minutes.
  7. Add pork along with any juices.
  8. Whisk sauce; add to skillet. Add red chili.
  9. Bring to a simmer; cook, stirring, 7-10 minutes or until pork is cooked and the sauce is thick.
  10. Top with scallion greens, and serve with rice.
