Coconut Panna Cotta
Ingredients:
- 1 3/4 cups Jolly Coconut Milk
- 2 1/2 tsp gelatin powder
- 2 cups whipping cream
- 1/2 cup sugar
- 4 pcs Jolly Peach Halves, cubed
- mint leaves, for garnish
Caramel Syrup:
- 1 3/4 cups Jolly Coconut Milk
- 1/2 cup white sugar
- 3/4 cup water, divided
Procedure:
- Pour Jolly Coconut Milk in a bowl. Add gelatin powder over coconut milk and stir well. Set aside.
- Combine whipping cream and sugar in a sauce pan. Bring to boil then remove from heat. Add gelatin mixture and stir until completely dissolved, about 5 minutes.
- Pour 1/2 cup of mixture into martini or wine glasses. Chill until set.
- To make caramel syrup, combine sugar and 1/4 cup water in a sauce pan. Caramelize over medium heat until golden. Remove from heat then pour remaining 1/2 cup water. Return to heat and stir until caramel is dissolved. Let cool completely.
- To serve, spoon cubed Jolly Peach Halves and caramel syrup over panna cotta and garnish with mint leaves.
