Dinakdakan
Ingredients:
- 6 cups water
- 400 g pork face (snout, ears)
- 400 g pork loin
- salt to taste
- 1 tsp pepper corns
- 1 pc red onion, peeled and diced
- 2 tbap ginger, peeled and minced
- 3 pcs sili labuyo, minced
- 1/4 cup calamansi juice
- 1/2 cup Jolly Real Mayonnaise
Procedure:
- Boil water in a pot over high heat. Turn heat to medium, then place the pork meat, salt and pepper corn in boiling water. Cover the pot and simmer for about 45 minutes to 1 hour or until meat is tender. You may use pressure cooker to reduce cooking time to 20 minutes.
- Remove cooked pork and then grill it over coal until crisp and slightly charred.
- Let it cook and cut into small chunks.
- In a large bowl, combine pork meat, onions, ginger, siling labuyo, calamansi juice, and Jolly Real Mayonnaise. Toss to combine. Season with salt and pepper to taste.
