Ingredients:
- ½ cup Dona Elena Pure Olive Oil
- 1 cup all-purpose flour
- ½ tsp. fresh thyme
- ½ tsp. cinnamon
- 1 cup white sugar
- pinch of salt
- 1 tbsp. baking powder
- 1 cup fresh milk
- 2 cups canned peaches (drained & pat dry dried)
- 2 cups ripe mango
- 1 tbsp. lime juice
- vanilla ice cream
Procedure:
- Pre heat the oven to 195C.
- Marinade the mango and peaches in lime juice.
- Combine all-purpose flour, white sugar, salt, fresh thyme, cinnamon, and baking powder.
- Add milk and whisk until all ingredients are moistened.
- Pour and spread the pure olive oil on the baking pan and make sure to cover all the surface area.
- Pour the batter in the baking pan and put the marinated fruits on top.
- Bake the cobbler at 195C for 45 mins.
- Serve with vanilla ice cream.
