Mango and Peach Thyme Olive Oil Cobbler with Vanilla Ice Cream

Ingredients:

  • ½ cup Dona Elena Pure Olive Oil
  • 1 cup all-purpose flour
  • ½ tsp. fresh thyme
  • ½ tsp. cinnamon
  • 1 cup white sugar
  • pinch of salt
  • 1 tbsp. baking powder
  • 1 cup fresh milk
  • 2 cups canned peaches (drained & pat dry dried)
  • 2 cups ripe mango
  • 1 tbsp. lime juice
  • vanilla ice cream

Procedure:

  1. Pre heat the oven to 195C.
  2. Marinade the mango and peaches in lime juice.
  3. Combine all-purpose flour, white sugar, salt, fresh thyme, cinnamon, and baking powder.
  4. Add milk and whisk until all ingredients are moistened.
  5. Pour and spread the pure olive oil on the baking pan and make sure to cover all the surface area.
  6. Pour the batter in the baking pan and put the marinated fruits on top.
  7. Bake the cobbler at 195C for 45 mins.
  8. Serve with vanilla ice cream.
