Pork and Tofu Adobo

Ingredients:

  • 1 kg pork kasim, cut into serving pieces
  • 1/2 cup cane vinegar
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 3 tbsps Jolly Heart Mate Canola Oil
  • 1 head garlic, smashed
  • 1 pc medium red onion, chopped
  • 2 tbsp Jolly Salted Black Beans
  • 2 tbsp sugar
  • 2 tbsp soy sauce
  • 1 cup water
  • 1 pc bayleaf
  • 1 can Jolly Whole Mushrooms 284g, halved
  • 4 pcs fried tofu, quartered
  • Salt, to taste

Procedure:

  1. Combine pork, vinegar, salt and pepper in a bowl. Marinate overnight. Drain and reserve stock
  2. Heat Jolly Heart Mate Canola Oil in a casserole. Fry pork together with garlic and red onion until brown
  3. Add Jolly Salted Black Beans, sugar, soy sauce, marinade, water and bay leaf. Simmer over low heat until pork is tender
  4. Stir in Jolly Whole Mushrooms and tofu. Continue cooking or 5 minutes. Adjust seasoning by adding salt. Serve
