Sweet Poached Pork with Mushroom
Ingredients:
- 1 1/2 cup tomato sauce
- 2 tbsps. balsamic vinegar or cane vinegar
- 4 cloves garlic, minced
- 2 tsps. soy sauce
- 1 tsp honey or sugar
- 1/4 tsp red pepper flakes
- 750 g pork tenderloin, cut into cubes
- 1 can Jolly Whole Mushroom 400g
- 1 can Jolly Garbanzos 225g
- 1 can Jolly Peach Halves
Procedure:
- To make the marinade, in a large bowl, whisk together the tomato sauce, vinegar garlic, soy sauce, honey or sugar and pepper flakes. Remove and serve half of the marinate.
- Add the pork to the large bowl of marinade, stirring to coat the pork. Cover and marinate at room temperature for 30 minutes.
- Remove the meat using a slotted spoon, then discard the marinade.
- In a large frying pan over medium flame, bring the reserved marinade to a boil. Reduce heat and boil for 1 minute. Add the pork, cover and cook for 5 minutes, adding 2 tbsp. of water if it becomes too dry. Uncover and add Jolly Whole Mushroom and Jolly Garbanzos.
- Continue to cook until pork and vegetables are cooked and the sauce has thickened.
- To serve, line the plates with sliced Jolly Peach Halves and divide the poached among individual plates. Serves 6.
