Sweet Poached Pork with Mushroom

Sweet Poached Pork with Mushroom

Ingredients:

  • 1 1/2 cup tomato sauce
  • 2 tbsps. balsamic vinegar or cane vinegar
  • 4 cloves garlic, minced
  • 2 tsps. soy sauce
  • 1 tsp honey or sugar
  • 1/4 tsp red pepper flakes
  • 750 g pork tenderloin, cut into cubes
  • 1 can Jolly Whole Mushroom 400g
  • 1 can Jolly Garbanzos 225g
  • 1 can Jolly Peach Halves

Procedure:

  1. To make the marinade, in a large bowl, whisk together the tomato sauce, vinegar garlic, soy sauce, honey or sugar and pepper flakes. Remove and serve half of the marinate.
  2. Add the pork to the large bowl of marinade, stirring to coat the pork. Cover and marinate at room temperature for 30 minutes.
  3. Remove the meat using a slotted spoon, then discard the marinade.
  4. In a large frying pan over medium flame, bring the reserved marinade to a boil. Reduce heat and boil for 1 minute. Add the pork, cover and cook for 5 minutes, adding 2 tbsp. of water if it becomes too dry. Uncover and add Jolly Whole Mushroom and Jolly Garbanzos.
  5. Continue to cook until pork and vegetables are cooked and the sauce has thickened.
  6. To serve, line the plates with sliced Jolly Peach Halves and divide the poached among individual plates. Serves 6.
