Zucchini Muffins

Zucchini Muffins

Ingredients:

  • 1 cup all-purpose flour, sifted
  • 1 cup zucchini, grated
  • 1/2 cup Mott’s 100% Apple Juice
  • 1/2 cup white sugar, sifted
  • 1/4 cup softened butter
  • 1 pc egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 1 tbsp. sesame seeds

Procedure:

  1. Combine all dry ingredients and mix well.
  2. In a separate bowl, cream butter using an electric mixer. Add egg, Mott’s 100% apple juice, vanilla extract and zucchini. Mix until well blended.
  3. Add mixture of dry ingredients and blend well.
  4. Pour batter into ungreased muffin pan.
  5. Bake in preheated oven at 180 degrees Celsius for 40 minutes.
  6. Insert a toothpick to check for doneness. Should come out free from crumbs or cake batter. Makes 6 pieces.
