Double Fried Garlic Soy Chicken
Ingredients:
Chicken Marinade:
- 5 pcs. chicken wings (drumette and wingette, divided)
- 2 tbsps. mirin or sweet rice wine
- 1⁄2 tsp. salt
Korean Batter:
- 1 cup all-purpose flour
- 1⁄4 cup cornstarch
- 1⁄2 tsp. baking powder
- 1 1⁄4 cup cold water
- 1 tsp. salt
- 1 tsp. chili powder
- 4 cups of Dona Elena Pomace Olive Oil, for frying
Garlic Soy:
- 3 tbsps. Dona Elena Pure Olive Oil
- 1 tbsp. garlic, chopped
- 1 tbsp. soy sauce
- 4 tbsps. honey
Procedure:
- Marinade the chicken wings with mirin and salt for at least 1 hour.
- In a bowl, mix all the batter ingredients together.
- Heat the Dona Elena Pure Olive Oil in a sauce pot.
- Quickly sauté the garlic (do not brown)
- Add the honey and soy sauce, then set aside.
- Heat the Dona Elena Pomace Olive Oil.
- Dip the chicken in the batter.
- Fry the chicken for 3 mins.
- Put the chicken on a strainer and let it rest for 3 mins.
- Double fry the battered chicken for another 2 mins.
- After frying, dip/coat the chicken in the garlic soy mixture.
