Guilt-Free Granola Cookies

Ingredients:

  • 1 large egg
  • 1/3 cup unsalted creamy almond & peanut butter
  • 1/3 cup nut butter softened in room temperature
  • ½ cup Langnese Golden Clear Honey
  • 1 teaspoon pure vanilla extract
  • 3 ¼ cup Daily Fix Very Nutty Granola
  • ½ cup superfine almond flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • ½ teaspoon baking powder
  • 2/3 cup daily free chocolate chip cookies or chopped chocolate
  • 1 teaspoon ground flax seeds (optional)
  • 1 teaspoon chia seeds (optional)

Procedure:

  1. Preheat oven at 350F.
  2. Mix all the liquid ingredients first then add the dry ingredients into the liquid mixture. Do not go over board with your add-ins to avoid making it crumble or fall apart.
  3. Adjust dough consistency accordingly – it should not be too dry or wet.
  4. Place ¼ cup cookie dough balls in a baking sheet & flatten each slightly.
  5. Bake for 10-14 minutes until golden brown but still soft. Avoid overbaking the cookies.
  6. Cool for 5 minutes on baking sheet and transfer to a cooling rack. It will continue to set after removing it from the oven.
