Salmon Confit with Red Pesto Sauce
Ingredients:
- 2 pcs salmon fillet
- 1 pc lemon
- 2 pcs white onion, wide cut
- 8 pcs asparagus, cut the hard part and cut in half
- 8 pcs garlic cloves
- 3 tbsp Doña Elena Pure Olive Oil
- 2 tbsp Doña Elena Red Pesto Sauce
- salt and pepper to taste
Procedure:
- Rub the salmon with salt, pepper and lemon.
- Heat 3 tbsp of Doña Elena Pure Olive Oil.
- Add the sliced onion and garlic cloves.
- Add the salmon and pan fry for 8 to 10 minutes. Then set aside.
- Add the asparagus and pan fry for 2-3 minutes.
- Arrange the cooked salmon on a plate and put 2 tbsp of Doña Elena Red Pesto Sauce on top.
- Optional: Serve with potato salad, sliced tomatoes and arugula leaves.
