Taco Rice

Ingredients:

  • 2 tbsp Jolly Heart Mate Canola Oil
  • 4 cloves garlic, crushed
  • 1 pc large red onion, chopped
  • 1/2 kg lean ground beef
  • 1 tbsp chili powder
  • 2 tsp cumin powder
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 tbsp Jolly Tomato Paste
  • 2 tsps soy sauce
  • 1/2 cup water
  • 1 can Jolly Pieces and Stems Mushrooms 284g, drained
  • 1 cup Jolly Whole Kernel Corn, drained
  • 5 cups cooked rice
  • 1 cup cheddar cheese, grated
  • 1 head iceberg lettuce, shredded
  • 4 pcs tomato, chopped
  • 1 pc medium red onion, chopped (for toppings)
  • 1/4 cup cilantro, chopped

Procedure:

  1. Heat Jolly Heart Mate Canola Oil in a pan. Sauté garlic and red onion until fragrant. Add beef, chili powder, cumin, salt and pepper. Cook for 8-10 minutes until brown, stirring occasionally.
  2. Add Jolly Tomato Paste and soy sauce. Cook for another 3 minutes. Add water to moisten mixture. Stir in Jolly Pieces and Stems Mushrooms and Jolly Whole Kernel Corn and cook until just heated through
  3. To assemble, scoop rice in individual bowls. Top with cooked meat, cheese, lettuce, tomato, onion and cilantro. Serve hot.
