Ingredients:
- 2 tbsp Jolly Heart Mate Canola Oil
- 4 cloves garlic, crushed
- 1 pc large red onion, chopped
- 1/2 kg lean ground beef
- 1 tbsp chili powder
- 2 tsp cumin powder
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2 tbsp Jolly Tomato Paste
- 2 tsps soy sauce
- 1/2 cup water
- 1 can Jolly Pieces and Stems Mushrooms 284g, drained
- 1 cup Jolly Whole Kernel Corn, drained
- 5 cups cooked rice
- 1 cup cheddar cheese, grated
- 1 head iceberg lettuce, shredded
- 4 pcs tomato, chopped
- 1 pc medium red onion, chopped (for toppings)
- 1/4 cup cilantro, chopped
Procedure:
- Heat Jolly Heart Mate Canola Oil in a pan. Sauté garlic and red onion until fragrant. Add beef, chili powder, cumin, salt and pepper. Cook for 8-10 minutes until brown, stirring occasionally.
- Add Jolly Tomato Paste and soy sauce. Cook for another 3 minutes. Add water to moisten mixture. Stir in Jolly Pieces and Stems Mushrooms and Jolly Whole Kernel Corn and cook until just heated through
- To assemble, scoop rice in individual bowls. Top with cooked meat, cheese, lettuce, tomato, onion and cilantro. Serve hot.
