Pork and Tofu Adobo
Ingredients:
- 1 kg pork kasim, cut into serving pieces
- 1/2 cup cane vinegar
- 2 tsp salt
- 1/2 tsp ground black pepper
- 3 tbsps Jolly Heart Mate Canola Oil
- 1 head garlic, smashed
- 1 pc medium red onion, chopped
- 2 tbsp Jolly Salted Black Beans
- 2 tbsp sugar
- 2 tbsp soy sauce
- 1 cup water
- 1 pc bayleaf
- 1 can Jolly Whole Mushrooms 284g, halved
- 4 pcs fried tofu, quartered
- Salt, to taste
Procedure:
- Combine pork, vinegar, salt and pepper in a bowl. Marinate overnight. Drain and reserve stock
- Heat Jolly Heart Mate Canola Oil in a casserole. Fry pork together with garlic and red onion until brown
- Add Jolly Salted Black Beans, sugar, soy sauce, marinade, water and bay leaf. Simmer over low heat until pork is tender
- Stir in Jolly Whole Mushrooms and tofu. Continue cooking or 5 minutes. Adjust seasoning by adding salt. Serve
